Hi there. It’s been a while since I’ve posted, and WOW has a lot happened in the meantime. Things are pretty surreal right now. I hope that all of you and your families are staying well and in good spirits. It seems like we might only be at the beginning of this thing, and the future feels uncertain. But if there is anything positive we can draw from this, it’s the opportunity to slow down and re-focus on the most important things in life: our health and the people we love. It’s sort of interesting that those are the two things people commonly toast to when they’re sharing a drink. I hope all of you raise a glass in that same spirit this week. We’ll get through this.

It’s only been a few days since I first mixed up this cocktail with Risata Moscato D’Asti, but it feels like everything has changed since then. Originally I created it in a spirit of celebration. We just bought a new house and moved in on Saturday. It’s in one of our favorite neighborhoods in the Boston area, Union Square, and it’s everything we ever wanted in a home. We’re so excited. Stay tuned here and on Instagram for photos and stories as we settle in. Posts may be few and far between until then, since a lot of my glassware and bar tools are still in boxes. At least we have a lot to do while we quarantine ourselves away. The place has a wet bar in the basement that I’m going to turn into my dream work station, so great things will be quick to follow!

Speaking of great things, let’s talk about the Mimosa. Everyone loves this classic brunch cocktail. In terms of simplicity vs. impact, the Mimosa can’t be beaten. You definitely don’t need to be a cocktail whiz to throw some orange juice and sparkling wine together in a glass. There’s probably an ideal ratio, but I don’t know what it is, because eyeballing it works just fine. No stirring, no shaking. And yet it feels so fancy! It’s also acceptable to drink them in the morning, and because they’re low-ABV, doing so won’t ruin the rest of your day. It’s kind of a perfect drink.

It’s hard to improve on perfection, but I decided to try for Risata’s #YouHadMeAtMimosa campaign. With this recipe, I wanted to preserve the ease and simplicity of the Mimosa while still dressing it up. So I decided to combine it with another one of my favorite crowd-pleasing cocktails, the Piña Colada. It’s still easy as can be: combine pineapple juice, coconut water, and a sparkling wine like Risata Moscato D’Asti in a champagne flute and enjoy! It’s an elegant tropical cocktail that you can whip up in seconds.

Mimosa Colada with Risata Moscato D'Asti

 

Mimosa Colada

1.5 oz. pineapple juice
1.5 oz. coconut water
4 oz. Risata Moscato D’Asti

Add pineapple juice and coconut water to a champagne flute and top with Moscato. Garnish with a pineapple wedge or orchid.
